Parmigiano Reggiano


Golden rind opens to a straw colored interior; it is sharp, salty, bursting with flavor and very versatile. An excellent cheese for grating, cooking, melting and for use as an accent in from antipasto, to main courses of elaborate preparation and virtually everything in between or as an extremely flavorful table cheese. Superb by itself or in any dish. Commonly it is freshly grated and used as an accent to pasta dishes. Chef's Hint: we often use the otherwise useless end of the rind for soups, stews and casseroles; simply drop the rind in the pot and release a burst of flavor. Buy a wedge of Parmigiano and grate it fresh, really there is nothing quite like it!
